Mashed potatoes have always been one of my favorite foods. They are the ultimate comfort – creamy, hearty, warming. But, also, carb heavy, which not everyone is into. We’re not big on diets, but when we feel our pants getting tight we try to eat in a slightly more “slow carb” fashion which is, thankfully, very bean-friendly. Everyone has their favorite mac and cheese recipe. Whether you love Velveeta or sharp Cheddar, Kraft in the box or the homemade, baked variety, there are few who can resist the homey temptations of ooey, gooey, comforting mac and cheese. I am probably one of the few Americans who didn’t eat it, or even like it, growing up. I discovered it near adulthood, and it was a near revelation. Curry and Spice and Everything Nice
I have been making a lot of soup lately. Way more than usual. It’s just so good, so easy, and it’s usually even better the next day. I often make soup on Sunday and Tuesday afternoons, before Hebrew class from 5-8pm. That way I have something warm and tasty to come home to.
