I didn’t think I could love risotto more than I already did. But take leftover risotto, roll it into rice balls, stuff them with cheese, bread and deep fry and you’ve got an entirely new beast. Called arancini (which means little oranges in Italian), this Sicilian specialty is a vegetarian bar snack worth trying. They’re crispy on the outside with a melty, gooey surprise in the middle. And they’re way easier to make than you may think. They require cold risotto so it’s the perfect use for leftovers (and in fact I developed this recipe for an article on leftovers for the next issue of TreeFree Food). It’s that time of year! I’m not a fan of how commercial Valentine’s Day feels, but I also can’t really hate on any holiday that celebrates love. Growing up my dad would get my sister and I each a small, heart-shaped box of truffles from our favorite local chocolate shop, Lilac (it’s still in business, thanks goodness, and even has a location in Grand Central). My mom got the large box. All of us would savor the candies, sometimes taking only half a bite and returning the other half of the box for later. We showed a remarkable amount of self-control for children, but really we just had the foresight to spread out the enjoyment over a period of one or two weeks.

It takes all of 15 minutes to make, is vegetarian and gluten free, and scratches my Buffalo wing itch without all the calories. I adore tacos but living in Israel they’re not particularly plentiful. Luckily they’re easy to make at home and open to endless variation. I’ve already shared my vegetarian tofu tacos and my light and healthy fish tacos, but today I’ve got something a little more substantial and comforting for winter (although it would be equally delicious any time of year). These braised, shredded beef tacos take a few hours to prepare but are perfect for a lazy Sunday afternoon. Guys, it’s been a long week. The stress of the most recent Israel-Gaza conflict, which went on for eight loud days and sleepless days, was starting to get to me. The uncertainty – and intractability – of the situation was exhausting. But as of Wednesday night, just in time for Thanksgiving, they reached a ceasefire. For that I am beyond thankful. And while I probably won’t have any Thanksgiving leftovers to eat, I came up with this delicious cranberry sauce upside down cake for those of you who will have a few extra cans lying around.

I’ve been looking forward to this blog hop for a long time. Thanksgiving is my favorite holiday, and this will be my third year in a row spending it away from home. My Thanksgiving dishes, like all of my cooking, have taken on a Middle Eastern and Mediterranean flare, and this harissa roasted butternut squash is an example of that. It’s flavorful and easy, cozy and, although I originally developed it as a Sukkot side dish (check out the original piece here) it’s perfect for the Thanksgiving table. It’s a great side dish that goes with just about anything. It’s also vegan and could be the centerpiece of a lovely vegetarian meal. The theme of today’s blog hop was supposed to be Brussels sprouts, but we’ve had a little change of plan. As I’ve gotten the reports from friends and family and seen the increasingly dire photos of the aftermath from Hurricane Sandy, I’ve felt helpless. All I want to do is hop on a plane to help with the relief effort, to pick up the pieces in the Rockaways, to clean up Red Hook and lend a hand in Breezy Point or Staten Island. But I know that’s not realistic and I knew there had to be another way to help. Sweet and Sour Stuffed Onions

Before I moved to Israel, the extent of my experience with stuffed vegetables was peppers and cabbage, and it was limited even at that. Middle Eastern and Mediterranean cuisine has opened me up to a whole world of vegetables that can be stuffed with a variety of meat or vegetarian fillings and simmered in any number of sauces. Stuffed peppers and cabbages appear, but not nearly as often as stuffed zucchini, eggplant, artichokes, and even carrots. And onions – what a revelation stuffed onions are! They’re not stuffed whole. Instead, the entire, skinned onion is simmered until tender, and the individual layers are separated and wrapped around a savory filling.

It’s hard to believe that it’s already the end of October. Living in a country that doesn’t celebrate Halloween, it’s easy to forget that it’s approaching without the sensory overload of decorations, costumes, scary music and candy. The leaves here aren’t changing color and it’s still a balmy 83F outside. But ever the consummate expat, I refuse to let go of the traditions of home and so got myself in the trick-or-treating spirit by doing something that’s been on my cooking bucket list for a while – I made peanut butter cups. That’s right. Today I’ve got a recipe for peanut butter cups for you. As in Reese’s peanut butter cups, but homemade.
