Ingredients
2 tablespoons olive oil
1 onion, chopped
1 green pepper, diced
2 cloves garlic, minced
1 pound andouille sausage (I used smoked andouille chicken sausage)
1 (20-ounce) can red beans
½ cup chicken stock
Salt
Chopped parsley
Tabasco sauce
Directions
Heat the oil in a large pan. Add the onion, pepper, and garlic and cook, stirring often, until softened but not browned.
